Students Learn About Growing and Preparing Local Food

"Farm to Fork" summer camp at Knox College

A summer camp at Knox called Farm to Fork focuses on teaching children about local food.

Two-dozen grade school students learned about every aspect of "local food," during two sessions of "Farm to Fork," a summer camp held in July and August at Knox College.

The camp sessions were taught by Peter Schwartzman, associate professor and chair of environmental studies at Knox, and Matt Wallen, manager of Growing Together, an educational farm in Galesburg.

In addition to classroom sessions, the students got experience with planting, harvesting and preparing their own food.

Schwartzman and Wallen also took the students on field trips to local growing operations, from a large-scale farm outside of Galesburg to small, neighborhood plots close to the Knox College campus.

The camps, offered to the students at no charge, were supported by a Specialty Crops Grant from the Illinois Department of Agriculture to Knox County and the Galesburg Regional Economic Development Agency.
