More than 20 grade school students learned about every aspect of local food during two sessions of Farm to Fork, a summer camp held in July and August 2013 at Knox.
The camp sessions were taught by Peter Schwartzman, associate professor and chair of environmental studies at Knox, and Matt Wallen, manager of Growing Together, an educational farm in Galesburg.
In addition to classroom sessions, the students got experience with planting, harvesting, and preparing their own food. They also took field trips to local growing operations -- from a large-scale farm outside of Galesburg to small, neighborhood plots close to the Knox campus.
The camps, offered to students at no charge, were supported by a Specialty Crops Grant from the Illinois Department of Agriculture to Knox County and the Galesburg Regional Economic Development Agency.
