Food for Thought

As the efforts for increased sustainability at Knox continue to rise, students have started to become conscious of the way their food choices impact the world around them.

Food for Thought is an organization that helps students and those in the Knox-Galesburg community learn what they can do to change how they think about food to help the world become more sustainable.

Food for Thought hosts events to support local farmers and educate students, faculty, and staff about:

  • Food consumption, locally and globally
  • Food's environmental impact
  • New trends in food across the world
  • How to make your food habits more sustainable

Things you can do to be more sustainable and food-conscious

  • Attend the weekly local farmer's market in Galesburg (and find one near your hometown)
  • Participate in the Local Growers' Network (PDF)
  • Compost food that you don't or can't use
  • Don't waste food/try to take only as much as you will eat
  • Participate in local cropshares and food co-ops
  • Learn about and use the Knox Community Garden, and attend meetings at The Center to learn about neighborhood garden projects in Galesburg

The group strives to provide opportunities to discuss emerging ideas about how to become food-conscious and discuss how the Knox-Galesburg community can respond to the current and upcoming issues facing food and the environment.

Food for Thought meets weekly and is open to everyone who wants to learn more about food and what the local community can do to become more sustainable.
